How to Make Chai at Home: The Desi Doodh Patti Method (Plus 5 Fall Variations)

If you have ever wondered how to make chai at home that tastes like your khala's, the answer is not a tea bag and a microwave. It is a small pot, whole milk, loose leaf tea, and one boil you are not allowed to walk away from.

Salam, friends. The first cold morning of the year hit Columbus this week, and in our house that means the chai pot moves from the back burner to the front and stays there until April. We get asked for our recipe constantly, usually by someone who just paid six dollars for a "chai latte" that tasted like cinnamon syrup. So here it is, the way both of our mothers make it, with the small arguments between them noted for the record.

In a hurry? Boil a cup of water with two teaspoons of loose black tea and a crushed cardamom pod for two minutes. Add a cup of whole milk and sugar to taste. Bring it to a rolling boil, let it rise once, lower the heat, and simmer five minutes until it turns the color of a paper bag. Strain. Sit down.

What you need to make chai at home

Four things, none of them fancy. Loose black tea: a strong CTC ("crush, tear, curl") tea like Tapal Danedar, Wagh Bakri, Brooke Bond Red Label, or any Kenyan or Assam granule tea from the desi store. Tea bags work in an emergency, but they are weaker, so use two per cup. Whole milk: this is not the place for skim. Sugar: to taste, added while it simmers, not after. Cardamom: green pods, lightly crushed. Everything else is a variation.

The doodh patti method, step by step

1. Start with water. For two cups of chai, pour one cup of water into a small pot with two heaping teaspoons of tea and two crushed cardamom pods. Bring it to a boil and let it bubble for two to three minutes until it is dark red and smells like a train station in Lahore. This is where the strength comes from. Skipping it is why cafe chai tastes like warm milk.

2. Add the milk. Pour in one cup of whole milk and your sugar. Amraha's family uses a ratio closer to two parts milk to one part water for a richer cup. Humza's family is a strict one to one. Both are correct, and we have been married long enough to know not to settle this.

3. The rise. Turn the heat up and watch. The chai will climb the sides of the pot in a single dramatic foam. The moment it reaches the rim, lift the pot off the heat or lower the flame. This is the step that separates chai people from everyone else, and it is also the step that ruins stovetops, so do not check your phone.

4. Simmer. Bring it back to a gentle boil and let it go for four to six minutes. The color deepens from pink to caramel. Some families pour it back and forth with a ladle to build a little froth. The longer it simmers, the stronger and creamier it gets, up to a point where it turns bitter, which is around ten minutes.

5. Strain and serve. Pour through a fine strainer into cups. Chai should be drunk hot, immediately, with something salty or sweet nearby. It does not keep. It was never meant to.

Five fall variations

Masala chai. Add a small piece of cinnamon stick, two cloves, and a pinch of black pepper to the water at step one. Ginger goes in at the same time. This is the one to make when someone in the house is sniffling.

Adrak (ginger) chai. Skip the other spices and grate a thumb of fresh ginger straight into the boiling water. Sharper, cleaner, and the reason every Pakistani grandmother thinks she is a pharmacist.

Kashmiri pink chai. A different tea (green Kashmiri leaves), a pinch of baking soda, and a long, patient boil with cold water shocks until it turns rose pink. Finished with milk, salt or sugar, and crushed pistachios. A weekend project, not a Tuesday one.

Kesar (saffron) chai. Make the basic recipe and drop a few saffron threads into the milk as it simmers. Gold in color, wedding-guest in mood. Perfect for the first snowfall.

Karak chai. The Gulf version: extra tea, extra cardamom, evaporated milk instead of fresh, and a longer simmer until it is nearly syrupy. Served in small glass cups because you will not need much.

Mistakes that ruin a good pot

Using tea bags meant for iced tea. Adding the milk before the tea has brewed in water. Walking away during the rise. Reheating leftover chai in the microwave, which turns it flat and sad. And sweetening it after pouring, which never dissolves properly and leaves the last sip like syrup.
